• Grape: Xynisteri (100 %) - indigenous white grape from Cyprus. 13% APV

• Pale to medium straw yellow, with greenish highlights (common in Xynisteri whites)

• Medium dry

Nose

• Fruit aromas: citrus fruits, probably lemon, green apple, possibly melon or other light stone fruit

• Some floral or herbal notes: grassiness, subtle herbal undertones.

Palate

• Body: Medium body (richer than the dry version, due to residual sugar and lees ageing) but not heavy.

• Flavour profile: Citrus (lemon / lime), green apple, maybe tropical fruit hints; a fruit-sweetness balanced with acidity; possibly with the lees contributing a bit of texture.

• Finish: Cleaner finish with sweetness tapering and acidity lingering; not overly cloying.

Pairing suggestions

Food pairing: lighter appetisers, semi-spicy or lightly flavoured dishes, seafood, shellfish, light poultry dishes; also works well with soft cheeses or fruit-based starters. Could be good with Cypriot meze.
