Appearance

• Golden yellow to amber 

Nose 

• Floral lift
• Tropical white fruit (think pineapple, melon)
• Citrus peel, especially orange zest / bergamot
• Subtle beeswax / waxy texture notes

Palate

• Fresh acidity balancing the richer texture
• Noticeable tannic grip (from skin contact)
• Medium to full body
• Flavours of citrus (orange, grapefruit), stone/tropical fruit, slight herbal/spice edge

Finish

• Saline, mineral-driven
• Long, slightly phenolic (light bitterness like orange pith)
• Persistent, structured finish

Symeon Winery

Nestled in the mountainous region of Larnaca, in the village of Odou, Symeon Winery is a small, newly established project that reflects the quiet revival of winemaking in this lesser-known part of Cyprus. Founded by Symeon Symeou, the winery is driven by a passion for the land and a desire to contribute to the region’s emerging wine identity, producing limited quantities while steadily building its presence.
