Commandaria is a historic dessert wine from Cyprus, produced under the PDO “Commandaria.” 12% APV.

Grapes: Mavro + Xynisteri indigenous varieties.

The grapes are sun-dried (on racks) for ~10 days to concentrate sugars before fermentation.

Very sweet. Must age at least 2 years; oxidation and oak ageing are part of the process.
Nose

Honey, sweet spices.

Dried fruits: figs, raisins.

Also notes of toffee, caramel, roasted nuts (hazelnuts / walnuts).

Some oak and perhaps subtle vanilla / coffee / chocolate from barrel ageing / oxidation.
Palate

Sweet, dessert wine: quite rich and concentrated sugar.

Texture: velvety, thick, possibly viscous.

Flavour profile echoes the nose: stewed or dried figs, raisins, caramel, toasted nuts, honey.

Finish: long, lingering with sweetness balanced by oxidative notes; a good harmony between overtones of oak/oxidation and fruit.
